The price of the set is 4,500 JPY + Shipping cost, and the content of the assortment is basically up to the vendor, but the customers can request their preference like “Please put Rosy seabass (Nodoguro*) in if you have”, but it depends on your luck whether your request can be fulfilled or not.
Fish from Himi Fishing Port
Since before, I’ve been enjoying to order the assorted sets of fresh fish from various parts of Japan about once a month, and for this month, I’ve ordered the set from Himi fishing port, Toyama prefecture.
Toyama Bay is known as a deep bay with its water depth about 1,000m, but around the Himi fishing port, they have the wide spread continental shelf, and fishing environment is different from the rest of Toyama bay, and the “Set net fishing” is taken as their fishing method.
Today’s Dish
Sashimi; Gurnard, Stargazer, and Largescale Blackfish
Deep-flied; Scorpion fish, and Flatfish
Seasoned Rice; with Black Porgy
To fry until the bones are tender, it takes about 6-7 minutes with 170℃ oil, and then, you can eat the whole bone. They say it is good for your health to eat the whole bone, because it contains a lot of calcium.
Other than these, I separated some of largescale blackfish fillets for Separated fillets for Meuniere and frozen them, and I also made soy sauce pickles from sashimi-sized sliced fillets. These are lifehacks to keep the fish fresh and eat deliciously even after a few days. And sometime, it can be more delicious if it is aged for a few days in a right way.
For March, from where I would order the fish assortment? What’s the seasonal fish for Spring? I cannot wait for the next time!
